Pouch pH, moisture content and water activity
These are different measurements. Each needs a defined method, conditions and interpretation in the context of the formula.
Define how pH is measured
A pouch is not a simple bulk liquid. Describe whether the method uses an extract, a dispersion or another defined preparation, and state the ratio, water quality, equilibration, temperature and instrument calibration. Comparing pH values obtained by different preparation methods can be misleading.
Separate moisture from water activity
Moisture content describes the amount of water by a specified analytical method. Water activity describes water availability under stated conditions. Two formulas with similar moisture content need not have the same water activity. A single number cannot demonstrate microbiological safety, sensory comfort or stability.
Make a useful control plan
Link methods to the finished specification and stability program. Record sampling location, number of units, instrument or method, acceptance criteria and action for an out-of-specification result. Establish the limits with appropriate technical review rather than borrowing a range from a nicotine pouch or unrelated formula.
